How do you choose non-stick baking paper?
A practical guide to choosing non-stick baking paper based on temperature, grease, moisture, contact type, and format in food production.

1. Start with temperature and time
Baking paper is treated to work at elevated temperatures, but every reference has a limit. Before comparing prices, confirm the maximum temperature and exposure time it withstands and check them against your real baking curve, not the oven's nominal setting.
2. Characterize the food: grease and moisture
A high-fat batter demands stronger resistance to oil migration; a moist product demands moisture control. Greaseproof and waxed papers serve different needs and should not be used interchangeably in the oven.
- High fat: prioritize resistance to oil penetration.
- High moisture: evaluate barrier and cooling behavior.
- Frozen or chilled: verify performance outside the oven.
- Delicate product: prioritize clean release.
3. Define contact type and format
